Garlic Parmesan Pasta with Italian Sausage, Spinach, + Roasted Butternut Squash
Serves 3-5 (depending on how much you serve per person)
INGREDIENTS
๐ธ12 oz Farfalle Pasta (or 1 box)
๐ธ2 cups Butternut Squash (cubed)
๐ธ1 lb Italian Sausage
๐ธ6-8 Garlic Cloves, minced
๐ธ6-8oz Fresh Spinach
๐ธ1 cup Heavy Cream
๐ธ1/3 cup Parmesan Reggiano, freshly grated
๐ธOlive Oil
๐ธItalian Seasoning
๐ธRed Pepper Flakes
๐ธFreshly Ground Salt + Pepper
INSTRUCTIONS
1๏ธโฃ Preheat oven to 400 degrees, and place a large pot of water on high heat.
2๏ธโฃ Toss butternut squash, olive oil, salt and pepper in a bowl, then spread the squash out in a single layer on a parchment paper lined baking sheet. Roast in preheated oven and set your timer for 30-35 minutes.
3๏ธโฃ Over medium-high heat, heat olive oil in a medium skillet, then add crumbled sausage and cook until browned. Mix in italian seasoning and red pepper flakes, then pour cooked crumbled sausage into a bowl and set aside.
4๏ธโฃ When your large pot of water begins to boil, add salt, then add pasta and cook as instructed on the box.
5๏ธโฃ In the same skillet, add olive oil and minced garlic over medium heat and sautรฉ 30-60 seconds. Add in fresh spinach and mix continuously until spinach wilts. Add heavy cream and bring to a brief boil, then immediately reduce heat to simmer. Add freshly grated parmesan cheese (even though you want to, do not add more cheese than instructed or else it will become too thick - you can add more on top at the end), and mix until the cheese melts. Season with salt and pepper to taste.
6๏ธโฃ Drain the pasta when itโs done, and remove roasted butternut squash from the oven when itโs done. Add cooked crumbled sausage into the garlic parmesan sauce and stir to combine. Then, add in cooked pasta and stir to combine.
7๏ธโฃ Scoop pasta into a bowl and top with roasted butternut squash, freshly grated parmesan reggiano, and freshly ground pepper. Serve immediately.
